Hello again! Yes, I’m still alive…even though my lack of posts over the last few months may suggest otherwise!
Although I haven’t been doing much posting, I have been doing MUCH baking…lots and lots of baking! One of the most exciting things about deciding to go grain-free and sugar-free (and choosing to use only real and wholesome food — none of the processed stuff) is coming up with delicious new recipes. It’s something that I don’t think I’d ever get sick of!
After spending over 15 hours in the last day and a half, cooking and baking at Wilder & Hunt, I once again found myself in the kitchen – baking. As soon as I walked in my door, I decided that I needed to bake some cookies, since we had none in the house (not acceptable!) and about 20 minutes later, my house smelled like sweetly toasted heaven and I had at least a dozen of these amazing cookies to show for it.
In case you were wondering, Wilder & Hunt is an exciting, brand-spankin’ new “Real Food” store/cafe offering raw smoothies, delicious baked goods and ready-made meals catering to Paleo, Primal, Vegetarians/Vegans as well as anyone interested in being healthy. This has been my favorite morning/afternoon (or both) snack this week, so I thought it’s about time I share this recipe so you can get in on this goodness too! I’m sure you’re familiar with “Lara Bars”, right? Well this is my version of Lara bars…a mixture of dates, nuts, raw cocoa powder, coconut and spices. I thought it would be fun to shape them into “logs” which are pretty much the same size of a nice cuban cigar (just slightly better for you). My recipe I’m going to share with you today is simple and sweet, and takes care of that naughty craving you may have to indulge in a not-so-healthy sweet treat. When I get those cravings, I like to make sure I’ve got something in my cupboard, ready to treat myself to!
I wasn’t so prepared the other night. Cam and I both were wanting something sweet after a pretty late dinner, and after scrummaging through my cupboards trying to be creative and think what I could turn into a ‘dessert’ in a relatively short amount of time, I decided on cookies. I thought I should post this recipe, since I used these in my latest recipe “Spectacular Dark Chocolate Cake with Peanut Butter Frosting” that I most recently posted… I made this original recipe using peanuts, but if you are a strict paleo dieter or just have allergies to peanuts, you can use other nuts if you wish. I’ve also made this using almonds and cashews, and they turned out just as delicious! I like having a jar of these in my cupboard to have on hand… these are a super tasty sweet and salty snack, and they also are the perfect addition to use in protein bars or fudge, cakes and cookies, homemade ice-cream, the choice is yours! Plus, they’re free from refined sugar, so if you have issues with using sugar like I do, you’ll appreciate this treat even more!
It’s about time I post this recipe… I had been thinking about making my own almond milk for some time, and finally last week I decided to give it a try. The result? Spectacular. Amazing. Creamy. A Creamy-Vanilla-Caramel dream (did I mention there’s no caramel added?). This recipe makes about one and a half litres or 7 cupswhich I was sure would last me a week or so…boy was I wrong. This milk is so much creamier than any other almond milk I’ve bought… it’s a treat just on it’s own! This week I’ve had it on top of my “The Farmer’s Grain-Free Muesli“, I’ve used it in my RAW “Chocolate Sun Warrior Fudge Brownies“, and I’ve mixed it in my daily protein shakes (which make them taste more like a dessert)… yes, it’s time to make another batch!
I am so excited to share this recipe with you… it’s been a very long while since I’ve enjoyed a bowl of muesli for breakfast ~ especially since cutting out grains (including oats) from my diet. To be honest, I think I actually accepted the fact that it was just something I had to say goodbye to for good. Don’t get me wrong — since cutting out grains from my diet, I have felt so much better, and my stomach no longer feels like it’s working overtime trying to digest the food I put in. I feel healthier, and I actually don’t really even miss it. However, I did wake up this Sunday morning, feeling like a having real traditional “farmhouse” style breakfast.
When I was little, our family of 8 lived on a huge farm of 350+ acres in the country-side of Tennessee. This is where my five sisters and I were raised, learning to plant our veggies from seeds — I remember the excitement when my sisters and I would first discover the tiny seedlings in our garden sprouting up for the first time.
