Hello again! Yes, I’m still alive…even though my lack of posts over the last few months may suggest otherwise!
Although I haven’t been doing much posting, I have been doing MUCH baking…lots and lots of baking! One of the most exciting things about deciding to go grain-free and sugar-free (and choosing to use only real and wholesome food — none of the processed stuff) is coming up with delicious new recipes. It’s something that I don’t think I’d ever get sick of!
After spending over 15 hours in the last day and a half, cooking and baking at Wilder & Hunt, I once again found myself in the kitchen – baking. As soon as I walked in my door, I decided that I needed to bake some cookies, since we had none in the house (not acceptable!) and about 20 minutes later, my house smelled like sweetly toasted heaven and I had at least a dozen of these amazing cookies to show for it.
In case you were wondering, Wilder & Hunt is an exciting, brand-spankin’ new “Real Food” store/cafe offering raw smoothies, delicious baked goods and ready-made meals catering to Paleo, Primal, Vegetarians/Vegans as well as anyone interested in being healthy. My recipe I’m going to share with you today is simple and sweet, and takes care of that naughty craving you may have to indulge in a not-so-healthy sweet treat. When I get those cravings, I like to make sure I’ve got something in my cupboard, ready to treat myself to!
I wasn’t so prepared the other night. Cam and I both were wanting something sweet after a pretty late dinner, and after scrummaging through my cupboards trying to be creative and think what I could turn into a ‘dessert’ in a relatively short amount of time, I decided on cookies. This weekend was a pretty special one.
It was my honey Cameron’s birthday, and we were able to sneak away for a peaceful weekend in the beautiful Coromandel. Prior to this little trip, I spent hours (literally), trying to figure out the perfect birthday cake I could make for him — one that was healthy with none of the bad stuff, yet so yummy that you wouldn’t even know that it was! We’ve been sticking to the paleo thing for the most part (minus a few legumes, veggies, and nuts here and there), so while the cake is completely paleo – the frosting isn’t (darn those delicious peanuts!). This recipe, like many of the recipes I share with you, was a total experiment. I haven’t done the grain-free thing for very long, actually it’s a new thing I decided to start at the beginning of the year, and so far I’ve stuck to it like a champ. It turned out being pretty easy for me to make the switch (I was gluten-free before) and I haven’t really missed them at all…but the other morning I woke up with pancakes on my mind. Nice, moist, fluffy pancakes. I decided to take on the challenge, so with the few simple ingredients I had on hand, the amazing “Pumpkin Protein Pancakes” were born… these are incredibly moist, fluffy, and soooo delicious!!! You’d never tell that these are gluten and grain free, paleo approved, dairy free, and sugar free too!!
Cam and I devoured our pumpkin pancake stacks and both decided this combo is our new favorite breakfast (which is why we had it again this morning). The homemade almond cookie butter drizzled on top may seem like an odd combo with the poached egg and pumpkin pancakes – but be brave and try it for yourself…the combined flavors are simply amazing.
These protein bars were a total experiment, and I have to say – I wasn’t expecting much out of them. I threw a batch together last night, in hopes that by preparing these a day a head it would give me one less thing to worry about when my mid-afternoon hunger came around. And let’s just say – I was pleasantly surprised.
I am so excited to share this recipe with you… it’s been a very long while since I’ve enjoyed a bowl of muesli for breakfast ~ especially since cutting out grains (including oats) from my diet. To be honest, I think I actually accepted the fact that it was just something I had to say goodbye to for good. Don’t get me wrong — since cutting out grains from my diet, I have felt so much better, and my stomach no longer feels like it’s working overtime trying to digest the food I put in. I feel healthier, and I actually don’t really even miss it. However, I did wake up this Sunday morning, feeling like a having real traditional “farmhouse” style breakfast.
When I was little, our family of 8 lived on a huge farm of 350+ acres in the country-side of Tennessee. This is where my five sisters and I were raised, learning to plant our veggies from seeds — I remember the excitement when my sisters and I would first discover the tiny seedlings in our garden sprouting up for the first time. This is a little twist the standard guacamole recipes I’ve tried before… I’ve been loving the flavor that grilling adds to veggies, meats, fruits — anything really! So the thought came to my mind, why not Guac? Now, I oven grilled the ingredients for my recipe, however, you could also use a large non-stick pan to do the same, just make sure it’s got a little olive oil on it, and is on medium-high heat before you place your veggies on… you want them to get almost burnt. Now I’m sure by now you’ve either heard of or *gasp* tasted Trader Joe’s dangerously addictive “Speculoos Cookie Butter”, right? I mean, even I have — and I live in New Zealand, where — *gasp again* Trader Joe’s doesn’t even exist!!! (Oh how I miss America…)
Now don’t get me wrong, this “speculoos spectacular stuff” tastes just as good as it sounds ~ but it also happens to be just as bad for you as it sounds too! Continue reading →
Ok, I’ll admit – I’ve been on somewhat of a “pumpkin” craze lately… and this is the third morning that I’ve made yet another version of my “Pumpkin Pie Spiced Smoothie“! Don’t get me wrong, that one was good – really good, but the last couple of times I’ve made this I’ve been on a mission to create a pumpkin pie batter – like, the real deal. Consistency, taste, everything – in a protein shake. This morning, it magically happened. I can’t even wait to post this, I’m so excited by the outcome, and would love for you to try it and leave feedback and let me know what you think! This was seriously outta this world, and could very well cure me of my “hot breakfast” habit – I don’t think I’d get tired of this! Not to mention, it’s way better for you than actual pumpkin pie (100% raw, no sugar, healthy fats as opposed to the bad ones, high in protein and an excellent source of natural fibers, vitamins and minerals!).
I woke to one of the most beautiful summer days… not a cloud in the sky. It’s Waitangi Day today, which to me means the day off and the perfect weather for a BBQ feast! The marinades for both the veggies and chicken were superb – the flavors were sooo good! I’m a little embarrassed to admit it, but Cam and I ate this entire barbecue feast, as well as some leftover Creamed Cashew Cauliflower Rice (it was delicious served cold!). I will definitely be making both of these again – they were that good.
