Creamy Vegan Caesar Salad Dressing


I can’t wait to share this recipe with you! This is a deliciously creamy and VEGAN ceasar salad dressing that literally takes a few minutes to throw together, and tastes incredible. This is a great recipe to make at the start of the week to stick in your fridge. You can use this creamy dressing for salads, dipping carrots or celery in, or you can even spread on almond meal biscuits or cauliflower crackers for a delicious snack! (which reminds me, those are two other recipes I still need to post)

While I’m not vegan myself, I am dairy-free, which makes me appreciate recipes like this that give you that rich and “creamy” texture and flavor, without the dairy!

Creamy Vegan Caesar Salad Dressing

Dietary Info: GF/DF/SF/PA/V and Vegan! (*see notes at end of post for dietary codes)

Makes 5 servings = 3 Tbs/45g per serving

Yield: 250g

Ingredients:

  • 1/2 c. (65g) Macadamia nuts
  • 1/4 c. (30g) Pine nuts
  • 2 medjool dates (30g), pitted and soaked for 30 minutes in water
  • 1 tsp. dried basil OR a few fresh basil leaves
  • 1 clove garlic
  • 2 tsp. nutritional yeast
  • 1 Tbs + 1 tsp lemon juice
  • 1/4 tsp. himalayan salt
  • 1/4 tsp. cracked black pepper
  • 1/4 c. coconut water + 3 Tbs. Water

Instructions:

  1. Place all ingredients in food processor and pulse/blend for 30-45 seconds or until a nice creamy texture. You may add an extra Tbs. or so of water if the texture is too thick for your liking.
  2. Drizzle on top of your favorite salad, great as veggie dip, spread on crackers or however you desire!

ceasar3 Simple Caesar  Salad

Serves 1

Ingredients:

  • 2 c. iceberg lettuce
  • half a large roma tomato
  • 1 hard boiled egg, quartered
  • 15g fillets of anchovies, chopped into tiny bits
  • 1 Tbs. roasted sunflower seeds
  • 3 Tbs. creamy vegan caesar salad dressing

Instructions:

  1. In a medium size salad bowl, toss all ingredients together. Serve!
